Directions:

1. In a bowl, add in the chana dal, urid dal, mung dal and barley. Stir well to mix and cover with water. Set aside to soak overnight.

2. The next day, in a separate bowl add in the wheat berries and crush thoroughly. Cover with water and set aside to soak for 1 ½ hours.

3. In a saucepan set over medium to high heat, add in the grains, lentils, beef pieces, crushed garlic, grated ginger and water. Stir well to mix and allow to come to a boil. Lower the heat to low and cook for 2 hours.

4. Remove the bone from the meat and continue to cook for an additional hour.

5. Add in the ghee, saffron, ground fenugreek, powdered coriander, powdered cumin, powdered garam masala, powdered chili and powdered turmeric. Stir well to mix and season with a dash of salt. Cook for 1 hour or until thick in consistency.

6. In a frying pan set over medium to high heat, add in the oil. Add in the sliced onion. Cook for 10 to 15 minutes or until caramelized. Transfer into the stew and stir well to incorporate. Continue to cook for an additional 15 minutes.

7. Remove from heat and serve immediately with a garnish of the fried onions.
